I just made these amazing muffins and I had share. It makes for an excellent breakfast item for a quick grab on your way out the door or even a sweater treat like a baked good that I find myself craving from time to time these days.
Ingredients
- 2 cups almond flour
- 2 tsp baking soda
- 1 tsp sea salt
- 1 Tbs cinnamon
- 1 cup dates, pitted
- 3 ripe bananas
- 3 eggs
- 1 tsp apple cider vinegar
- 1/4 cup coconut oil
- 1 ½ cups carrots, shredded
- ¾ cup walnuts, finely chopped
- muffin paper liners
Instructions
- Preheat oven to 350℉.
- In a small bowl, combine almond flour, baking soda, salt and cinnamon.
- In a food processor, combine dates, bananas, eggs, vinegar and oil.
- Transfer mixture to a large bowl and blend until completely combined.
- Fold in carrots and walnuts.
- Spoon mixture into paper lined muffin tins.
- Bake at 350° for 25 minutes.
